Mont-blanc is a popular chestnut cake in Japan, and Patisserie SATSUKI's supreme version that features Japanese chestnuts is an autumn favorite every year. An almond tart base that hides chunks of Italian marron glacés is topped with rich matcha pastry cream, red bean paste sweetened with kuromitsu syrup, pastry cream made with premium eggs, and crispy light matcha meringue. The masterwork is completed by a confit of Japanese chestnuts from Kumamoto prefecture and rich whipped cream from Omuta in Fukuoka prefecture, all encased in a generous heap of Japanese chestnut paste. The delightful harmony of exquisite flavors is set off with a subtle accent of natural sea salt from Aogashima Island, bringing out the sweet flavor and aroma of the chestnuts to their fullest extent.
