Indulge in an ultimate course menu created by two chefs who are fascinating the gastronomers of the world: 2023 M.O.F. honoree and Michelin two-star chef Jérôme Schilling of LALIQUE in the Bordeau prefecture, and Kazuyuki Tanaka of the acclaimed two-star Racine in Reims.

About the Chefs

 

Kazuyuki Tanaka

Born 1985 in Fukuoka city, Kazuyuki Tanaka started his culinary career at Hotel New Otani Hakata. He went to France in 2006 to further hone his skills, working at various establishments. In 2015, he opened his restaurant Racine in Reims, where he pursues quality not only in terms of taste and presentation, but also the element of surprise to entertain his guests. With his restaurant garnering high praise from established food magazines in France, he is the youngest Japanese chef to be named "Grand de demain" by Gault & Millau, and the youngest Japanese chef/owner to win two Michelin stars.

Jérôme Schilling

Born in the Alsace region, Jérôme Schilling trained under several culinary giants such as Joël Robuchon and Roger Vergé before joining the Villa René Lalique in 2015. In 2018 he became the head chef of LALIQUE within Château Lafaurie Peyraguey Hotel and Restaurant Lalique, a 13-room boutique accommodation established jointly by the four-century-old premier cru winery Château Lafaurie Peyraguey and luxury glassware brand Lalique. Schilling earned his second Michelin star in 2022, and was honored as a Meilleur Ouvrier de France in 2023. His passion and talent continue to attract epicures from around the world to his restaurant.
