Shinsuke Nakatani
Born 1977. He became enthralled in the culinary world upon enrolling in cookery school. With his passion for French cuisine in hand, he left for France at age twenty-three. After working in various restaurants such as “Helene Darroze” honing his culinary skills, he opened “Restaurant NAKATANI” in 2014. Despite manning his kitchen solely on his own since 2015, his brilliant sense and perfected skills attracted many customers and garnered a star from Michelin in 2016.
Keisuke Yamagishi
Born 1981. Upon graduating from culinary school, he left for France at age 27. After gaining valuable experience at top French restaurants as “L'Agapé”, he opened his own restaurant “étude” in 2013. He is known for completely eliminating dairy from his menus, and his approach that brings out the natural flavors of the ingredients to their fullest extent has garnered enormous praise. His restaurant received a star from Michelin in 2018.
