At Hotel New Otani, we dedicate ourselves to providing only the best Wagyu for our guests. Our top chefs make their way to cattle farms around the country in person to talk to the producers and learn how the cattle are raised before purchasing the cattle a whole.

Wagyu are carefully prepared by our chefs with the mastery that has been passed down over the generations in our kitchens, cooked to perfection for guests to enjoy its exquisite flavor and texture.

Available only in limited amounts, enjoy offerings of Chateaubriand,
the most prized cut of beef which is the prime portion of the fillet
that is scarce in itself.

U.S. beef from the Magical Chinese Oven

One of the largest of its kind in Japan, the wood-fired Chinese oven at Trader Vic’s Tokyo is the restaurant’s symbolic feature with its roots dating back to the Han dynasty era (206 BC - 220 AD). The oven cooks, not by direct fire, but with radiant heat that is equally distributed on to the ingredients to effectively preserve its natural taste.
