Great beef is truly hard to find. At Hotel New Otani Tokyo, our top chefs makes their way to cattle farms in person to talk to the producers and see how the cattle are raised in order to find the best beef possible. After thorough selection, the cattle are bought a whole and are carefully prepared with the mastery that has been passed down over the generations in our kitchens. The beef is meticulously brought back to 40℃, the supposed body temperature of a live cattle, before cooking it to perfection for guests to enjoy the exquisite flavor and texture.
